This one's an anaerobic natural produced by our the Salaverria Family. We've been buyiing from them for 2 years now, with this particular lot having undergone approximately 80 hours of fermentation in a tank.
The farm this bourbon comes from is 'El Martillo' (Spanish for "the hammer"). A medium-sized farm within the Salaverria's portfolio.
El Martillo is part of a long-term project where the quality and profile is optimised by changing the process to prepare a different and value-added product. A concept we may see more of in the coming years as farms look for different options to battle climate change.
This is a boozy anaerobic with notes of spices, yogurt, and dark berry syrup.
